Anyhoo, since I won't be able to edit this later, this first post is mostly a place holder so I can remember to add more pertinent things to this at a later date.
For tonight, I am trying this Chicken Pot Pie recipe, with modifications (mushrooms, clove of garlic, corn, and green beans, to name a few). So far smells quite nice and I may just do this more frequently (using store bought pie crust this time because I hurt too much, so fingers crossed it tastes decent enough).
Alrighty, have the first recipe (and am making this tonight).
Lazy BlueBerry Rhubarb Pie
Place a pie crust in the bottom of a pie pan.
In a large bowl, mix together all ingredients. (The laziness of this recipe utilizes the liquids in the fruit for the pie filling).
Pour into pie pan, and top with the second crust. Cut a few slits into the top (for an added bonus, brush a little melted butter over the top and sprinkle with sugar).
Bake at 350 degrees for 35 minutes, or until crust is golden brown.
Let cool for 30 minutes to serve warm, or chill for two hours for a nice cool dessert. (For an added bonus, top with strawberry swirl icecream while the pie is still warm).
