Oh the possibilities! Transportation/scheduling might be a problem for these too, but is there anything physical that you've wanted to learn, like dance, yoga, martial arts, or even cooking (keeps you on your feet a long time!)? There might be classes for these in your area that you could join. Joining a gym is a good option for you too since you don't necessarily have to be there for specific times, so might be easier to squeeze into your day.
If your schedule is too hectic, you could look into getting some exercise DVDs, that way you could get a good work out at home whenever time allows.
