I know a few people on here are worried about their weight, and since i'm massively interested in cooking (if i fail in the police then chef is my second choice) I'm also aware that alot of people don't know what to eat.
I thought i'd post a few healthy recipes that i've found to be absolutely delicious.
8 chicken wings, tips removed (if you don't like dark meat 4 chicken skin on chicken breast works)
salt and freshly ground black pepper
1tsp of rapeseed oil
1 small onion, peeled, finely diced
1 medium carrot, peeled, cut into small dice
1 celery stick, cut into small dice
110ml alcohol free white wine
half a pint of chicken stock
1 tsp fresh thyme leaves
Method. (pre heat your oven to 180*C)
Heat the rape seed oil in the pan until V hot then add the chicken skin down. Cook until skin is crispy and brown. take them out the pan and add your carrots, onions and celery. Once soft add the white wine. bring this to the boil and let it simmer untill about half of the liquid has gone. now add your chicken back in along with the stock. bring this back up to the boil, and put the pan in the oven for 30-40 minutes depending on your oven. serve however the heck you like, hot or cold freeze it iff you like. this should serve 2-3 people depending on how big your appitite is. this is essentially chicken and veg so you can eat as much as you like.
Now i know some of you are thinking "hang on but you fried the chicken" yeah i did. but quite frankly i could drink rape seed oil and see no negative effects. it's a VERY healthy oil. i know you're also thinking that the wine should decrese the health factor but lets be honest, it's not much wine, when you start to get bogged down in to calories protein carb and fat ratios is usually when people get confused and give up.
